Distillery Information

Vodka is composed mainly of water and ethanol but sometimes with traces of impurities and flavourings. Traditionally, it is made by distilling liquid from fermented cereal grains, and potatoes since introduced in Europe in the 1700s. Some modern brands use corn, sugar cane, fruits, honey, and maple sap as the base.
The small-batch vodka retails at $30 and is distilled seven times in a hybrid pot and column still, infused with hand-peeled and hand-chopped organic fruits and vegetables, and bottled at a craft distillery in Sonoma, California.Vodka goes through a column distillation process. This concept arrived in the 19th century when commercial distillers needed a faster method than pot distilling, which required cleaning after every batch. Column distilling involves large columns where mash/wash is constantly injected, and the steam rises to meet it.
The distillation process for vodka is repeated anywhere from 3 to 7 times. Some vodkas are distilled up to 10 or more times. The reason for this is to remove any traces of impurities or contaminants from the vodka. The general consensus seems to be that two or three distillations is ideal.
