Big Level Bourbon is a wheated bourbon 100% mashed, distilled, aged, proofed, and bottled at the Smooth Ambler distillery in West Virginia.
In the United States, rye whiskey is, by law, made from a mash of at least 51 percent rye. (The other ingredients in the mash are usually corn and malted barley.) It is distilled to no more than 160 U.S. proof (80% abv) and aged in charred, new oak barrels.
Established in 2009 by Tinsley Azariah Galyean, Jr. and John Little, Smooth Ambler Spirits is a state-of-the-art distillery located in the rural Greenbrier Valley of West Virginia.
Originally, Pennsylvania-style rye, also known as Monongahela-style, was a full-on rye bomb of a whiskey, 100% rye. It was a blend of malted and unmalted rye, with no corn or barley.
