Distillery Information

The rums are tripple distilled, handcrafted and aged in oak casks. Jerry O'Connell is the creator of this rum and owner of Soggy Dollar Bar in Jost Van Dyke, British Virgin Islands, arguably the most legendary beach bar in the Caribbean.After five to six days in fermentation, the resulting “wash” is transferred to our 500-gal pot still, where the liquid is heated to separate the alcohols. The still converts the alcohols to vapor form and then returns it to liquid through a condenser.Rum is a spirit made from sugarcane molasses or sugarcane juice. The sugarcane is fermented and then distilled. After distillation, the liquid will be clear and typically aged using bourbon casks, wooden casks or stainless steel tanks. The vessel of distillation plays a key role in what type of rum will result.Rum is made using only three ingredients: molasses from sugarcane, yeast and water. Ingredients are fermented, then distilled, aged, filtered and blended.
Distilleries producing light and heavy rums often blend the two to produce a rum having characteristics of both. Light rums tend to originate from countries originally colonised by the Spanish, such as Cuba, the Dominican Republic, Puerto Rico and Venezuela.
