Distillery Information

Japan's whisky is not like Scotch. Japanese whiskies are made most commonly from barley and distilled in a continuous still (as opposed to the pot stills used for Scotch). Suntory, Yamazaki, and Hakushu (all owned by Kirin) all age their malt in casks that previously held bourbon, sherry, or other types of wine.
The Beginnings The first Japanese whisky distillery was established in 1924 by Shinjiro Torii, who wanted to bring the taste of Scotland to Japan. Torii hired Masataka Taketsuru, who had studied whisky-making in Scotland, to help establish the distillery and produce the first Japanese whisky.
The three main ones are grain, water, and yeast, with the former in particular varying based on geographical origin and style of whiskey. In the broadest sense, whiskey is simply a spirit distilled from a fermented grain mash.
