Distillery Information

The Kaiyo Cask Strength is contradictory in many ways - it doesn't say “Japanese whisky” anywhere on the label, yet it is distilled and aged in Japan. They use mizunara casks to age all of their spirit, an expensive but unique touch that differentiates the core Kaiyo line.Kaiyo Whisky Mizunara the Single is a premium Japanese whisky aged in Mizunara oak casks, resulting in a distinctive flavor profile with notes of sandalwood, coconut, and vanilla, with an alcohol content of 43% ABV.
By 2024, products labeled as "Japanese whisky" will conform to new regulations. Japanese whisky must be fermented, distilled, aged and bottled in Japan, use some portion of malted grain in its mash, and use water sourced from Japan.
These casks are handmade due to Mizunara oaks delicate wood grain. This spirit is gently matured in traditional style for many years before it embarks on its unique sea voyage. Mizunara oak casks are the most expensive casks in the world.
Shochu is a Japanese traditional hard liquor, distilled spirits made from grains and vegetables. The most common base ingredients are sweet potato, barley, rice, buckwheat and sugar cane.
The Yamazaki Distillery is Japan's first and oldest malt whisky distillery established in 1923 by Suntory's founder Shinjiro Torii. Inspired by traditional Scottish whisky, Torii envisioned a Japanese approach by choosing a terrain and climate completely different to those of Scotland to create a unique kind of whisky.
