The casks are typically made of European oak and have been used to age sherry for several years before being used to age whisky.Irish whiskey is made from barley, wheat and corn. The respective quantity depends on the type of whiskey. The grain naturally contains a lot of starch in its husk. This starch must be converted into sugar, which is needed for the fermentation process in which the yeast converts the sugar into alcohol.
