Tasting Notes

A sweet smooth spirit with bold flavors, the taste of juniper is complemented by the floral, herbaceous notes of basil, thyme and botanicals. The finish has a pleasant rounded-ness, thanks to the subtle aftertaste of Nordic lingonberries and blueberries.

Old Tom became the general term for gin, but it evolved from there. One story is that that to prevent their illegal gin shops being discovered, shopkeepers took their stores underground and used the symbol of the black cat (or old tom cat) as a way of showing that they were an illegal distillery.
The Mayflower ship forms Plymouth Gin's trademark label today. Black Friars is indisputably the oldest working gin distillery with records of a 'mault-house' on the premises going back to 1697.

The dry gins have more added flavouring ingredients than Dutch types.Bushmills is home to the world's oldest licensed whiskey distillery with official records dating back to 1608, when the area was granted its license to distil. Over 400 years later, whiskey is still being made in Bushmills, thanks to experience and craft passed down from generation to generation.
