Four Pillars Rare Dry Gin features 10 botanicals. These are Tasmanian pepperberry, lemon myrtle (both in dry leave form), cassia, star anise, cardamom, coriander seeds, juniper berries, lavender, angelica root and Australian organic whole oranges (more on the latter later). The most traditional and still the most common method for gin distillation. A mix of juniper and other botanicals is steeped in neutral spirit which has been reduced in strength with water (normally to approx. 50% alc./vol.).
Gin is an alcoholic beverage obtained by distillation from a base of grain (wheat or barley). In a further procedure, botanicals along with water are added until the desired flavors are met. To be called a gin, the spirit must have a predominant flavor of juniper berries. This Australian dry gin is distilled with 10 botanicals: juniper berries, coriander seeds, cardamom pods, Australian lemon myrtle, Tasmanian pepper berry leaf, cinnamon, lavender, angelica, star anise and whole fresh oranges (peel and flesh).
Three limited-edition yuzu gins later, and we've finally got ourselves a stand-alone and permanent Fresh Yuzu Gin. The yuzu brings a mix of lemon, mandarin, cumquat and grapefruit aromatics – all bright and fresh citrus notes – while the addition of finger lime adds some deeper citrus character.
The key difference between regular gin and London dry gin is that while regular gins are often sweetened after distillation (with sugar or syrup), London dry gins are not sweetened at all—a feature that gives them a less syrupy taste and more of an herbal bite.
