This multi-million pound investment is a testament to our commitment to providing you with the best possible Edinburgh Gin experience.A Dutch physician who went by the name of Franciscus Sylvius is thought to be the 'inventor' of gin having started prescribing a juniper-based distilled spirit for medicinal purposes in 1550.Keen for some good, thirsty news to lift your spirits? The 2023 International Wine and Spirits Competition (IWSC) just went down in London Town, and Australia's very own gin hero Four Pillars won International Gin Producer of the Year for the third time. That's right, Four Pillars produces the Best Gin on Earth.To produce a decent (i.e. distilled) gin requires a two stage process – first a base 'neutral spirit' is made and then this is flavoured by through re-distillation with seeds, berries, roots, fruits and herbs and spices – collectively known as 'botanicals'.
Distilled gin is made by redistilling white grain spirit and raw cane sugar which has been flavoured with juniper berries. Compound gin is made by flavouring neutral grain spirit with juniper berries without redistilling and can be considered a flavoured vodka.
