Hard cider making, like most other fermented beverages, is a simple process of adding appropriate yeast to apple juice and allowing the yeast to ferment the juice into alcohol. Because of this simplicity, hard cider is one of our oldest fermented beverages, with a large amount of historic references to cider.
Quite simply, I fill a clean glass jar with fruit, submerge completely in alcohol, add a few spoons of sugar, cover & shake. The recipe is truly that easy, which makes this preservation method a nice low bar of entry for anyone experimenting with preservation for the first time.
