The most classic Chardonnay region is Burgundy. From Chablis in the north to the Macon in the South, this region runs the full range of steely Chablis to rich, tropical Macon. The Cote de Beaune produces wines of great finesse and age-ability, such as Puligny Montrachet. Chardonnays get that flavor profile from a process called malolactic fermentation, in which malic acid is converted into lactic acid during during the winemaking process.
