Distillery Information

Chardonnay originated in the Burgundy region of France, and takes its name from a small town in the Maconnais, an area in southern Burgundy that makes relatively inexpensive, high-value chardonnays.Buttery” Chardonnays get that flavor profile from a process called malolactic fermentation, in which malic acid is converted into lactic acid during during the winemaking process. This conversion softens the acidity of the wine, bringing a butter-like flavor to the palate.Chardonnay easily adapts and grows well in merely any type of climate. In colder climates, the wines tend to appear fresh and elegant with citrus and green apple flavors, while in warmer climates they become full-bodied with tropical fruit notes appearing on the nose.Put simply, Chardonnay is typically produced as a dry white wine, as opposed to sweet, and is often medium- to full-bodied. But this doesn't mean there isn't any sweetness to speak of! It's important to keep in mind that 'sweet' can mean different things for different people.Warmer-climate Chardonnays often showcase more tropical fruit, and tasting notes of pineapple, papaya, mango, and guava are common. Oak-influenced Chardonnays typically have flavors and aromas of cinnamon, clove, and vanilla, and if it's gone through malolactic fermentation, hints of butter are likely to be found.
