Founded in 2008 by husband-and-wife team, Dr. Robert Birnecker and Dr. Sonat Birnecker Hart, KOVAL began as the first distillery to open in Chicago since the mid-1800s. Prior to starting the distillery, Sonat and Robert had established careers in government and academia,but chose to forge a new path together.
Traditionally, vodka is made from grain - rye being the most common - which is combined with water and heated. Yeast is then added to the pulp, initiating fermentation and converting sugars into alcohol. Now the distillation process can begin.
Rye-based spirits also tend to be relatively lean and dry—an asset for vodka. In comparison, corn-based vodkas can skew a bit sweeter, while potato-based vodkas can be more rounded and earthy.
