In 2003, Mexico issued a proposal that would require all Mexican-made tequila be bottled in Mexico before being exported to other countries. The Mexican government said that bottling tequila in Mexico would guarantee its quality.
Most Tequilas come from the state of Jalisco, where the actual town of Tequila, Mexico resides. For starters, in order for a spirit to be called “Tequila” it MUST come from one of five authorized states in Mexico: Guanajuato, Jalisco, Michoacan, Nayarit, or Tamaulipas.While there are over 1,680 registered tequila brands on the market, there are only about 135 approved distilleries in all of Mexico. The size of those distilleries varies vastly. Tequila Los Abuelos (NOM 1493) has historically only ever distilled one brand, Tequila Fortaleza.The first suggests distillation was an ancient art in Mexico. Archaeologists have discovered old clay pots believed to have been used for distilling agave, with them appearing to create a beverage of around 32% ABV. The second theory is that Filipino immigrants introduced distillation.
