Each batch is distilled twice over, a process that takes approximately 24 hours. Lengthy but essential to get the purest essence of the grapes' aromas, we have used double distillation since our founding in 1724.
Rémy Martin (French pronunciation: [ʁemi maʁtɛ̃]) is a French firm that primarily produces and sells cognac. Founded in 1724 and based in the commune of Cognac, it is among the oldest cognac producers still in existence.
Cognac can only be made from grapes grown in the strictly defined Cognac region of France. It must be made from the juice of at least one of three particular grapes, the most common being Ugni Blanc and the other two being Folle Blanche and Colombard.
Cognac is a specific type of brandy produced from distilled white wine. It must be distilled twice, using copper pot stills, and aged in French oak barrels for a minimum of two years. Cognac's distillation season lasts from October 1 through March 31, a five-month annual window.Double distillation is required to make eaux-de-vie for cognac. In the first, a raw spirit called “brouillis” is produced. The second distillation produces a much higher alcohol content. Only the middle part, the 'heart', is saved.
Some cognac houses are now bottling cognac from a single distillery but this is still a blend of many different vineyards and ages of eaux-de-vie even though they have all been distilled at the same site. Typically cognacs are blended from numerous vintages across many different vineyards and crus.
