Kavalan was founded in 2005 by the King Car Corporation, a major Taiwanese beverage company. It is located in northeastern Taiwan at Yanshan in Yilan County, one hour's drive from Taipei. Distillery and brand are named after the indigenous Kavalan people who used to inhabit the area.Kavalan uses malted barley as its raw material and retains the aromas that we gain through the distilling process and from the new make spirit, which is matured for two years in our subtropical climate ensuring a rich flavour and complex texture.
The double distillation method is applied in the Kavalan distillery. Usually the stills work in pairs. The first distillation is to separate the alcohol and water. The second is composed of three parts: the foreshots (the first spirit to come off the still), the heart, and the feints (the final spirit from the still).Most people naturally assume that “single malt” means just that – a single whisky from a single barrel. In fact, what a Scottish “single malt” actually means is that it is only malt whisky, prepared in the traditional way, and produced by a single distillery in Scotland.
In distillation, the still is heated to just below the boiling point of water and the alcohol and other compounds vaporise and pass over the neck of the still into either a condenser or a worm – a large copper coil immersed in cold running water where the vapour is condensed into a liquid.
