The journey to create El Jefe Tequila took the founders to Jalisco, Mexico, where they embarked on a relentless quest to discover and craft a tequila that would be both smooth and appealing to the American palate.
Tequila is a distilled spirit made from the cooked and fermented juice of the agave (pronounced 'Uh-Gah-Vee'), a spiky Mexican plant which resembles a cactus. Traditionally the process is labour intensive and artisanal – and many tequila distilleries still operate this way.
The journey of blanco tequila begins in the sun-drenched fields of the Jalisco highlands and lowlands in Mexico, where the blue agave plant – tequila's sole botanical constituent – grows for between 6 to 10 years before reaching maturation.
