Every part of the rum is sourced, distilled, barreled, aged and bottled at Copal Tree Farms and Distillery in rural southern Belize.
In July of 2018, Copal Tree Distillery opened and began producing Copalli Rum. The farm-to-flask initiative supports sustainable agriculture causes in Southern Belize by producing and selling premium organic spirits. The distillery is located adjacent to Copal Tree Lodge and its 3,000-acre organic farm.
After five to six days in fermentation, the resulting “wash” is transferred to our 500-gal pot still, where the liquid is heated to separate the alcohols. The still converts the alcohols to vapor form and then returns it to liquid through a condenser.White or light rum is a distilled alcoholic drink made from sugarcane products, such as molasses, or sugarcane juice, that is filtered and bottled right away without the aging process used for darker rums.
