Fermented in pine vats & distilled by Don Baltazar Cruz Gomez from agave Espadín grown at about 4000 feet in steep and sandy soils. Spicy, round, and soft.

Don Baltazar Cruz Gómez distills Alipus San Luis del Rio Mezcal in San Luis del Rio, Oaxaca. He's been producing for Alipus since 2013, and his sons help him.
Alipus is made from agave espadín, the genetic ancestor of tequila's blue agave Weber. The agaves are wood-roasted in palenques (conical ovens), then stone-milled and fermented with native yeasts in open wooden vats. The mezcal is double-distilled in small wood-fired copper pot stills.
The Cruz family also operates a distillery in San Juan del Rio, where mezcals are fermented in oak vats and distilled by Rodolfo Juan Juarez.
