Alipus Ensamble is a mezcal made by Don Valente Angel in San Andrés, Oaxaca.
The mezcal is 47.5% ABV and is made from 90% espadin and 10% bicuishe maguey. It is cooked in a stone-lined, wood-fired roasting pit and milled with an electric shredder. The mezcal is then distilled twice in copper stills.
Alipus San Andrés is distilled by hand in a small village near Miahuatlan, south of Oaxaca City. The distillery uses large, shallow earthen kilns. The agave espadín is grown on a plateau at about 5,000 feet, with thin ferriferous soils.
Alipus mezcal was started in 1999 as a "social impact project" by Los Danzantes Distillery.
