It is distilled on our namesake farm in Oaxaca and bottled by women. We preserve the 400-year-old tradition of artisanal mezcal making, distilling on the premises of our namesake farm.
Yola Mezcal is handcrafted and organic, and run solely by women. Using a family recipe and agaves harvested on a family farm that was purchased in 1971, it is produced in San Juan Del Rio and bottled by women of Oaxaca, as their factory employs only women who are paid a fair wage.
Mezcal minero, produced in Santa Catarina Minas, is traditionally distilled in clay pots. Allegedly, those clay pots lend a certain distinctive flavor to the mezcals.
These terms refer to whether or not a mezcal was aged in oak after distilling. Joven, or "young," mezcal, is clear and unaged, like an eau de vie. Reposado is "rested" in oak for more than two months but less than a year. Añejo is aged for one to three years, and extra-añejo ages for longer than that.
